Cambodian Stir Fry Kreoung with Chicken

Ingredients:

  • 500g boneless, skinless chicken breast or thigh, thinly sliced
  • 2 tablespoons vegetable oil
  • 3-4 tablespoons Angkor Harvest Kreoung Marinate paste 
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cups mixed vegetables (such as broccoli florets, snap peas, carrots, etc.)
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Fresh herbs (cilantro or Thai basil) for garnish
  • Cooked rice for serving

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.

  2. Add the Angkor Harvest Kreoung paste to the skillet and cook for 1-2 minutes, stirring constantly, until fragrant.

  3. Add the sliced chicken to the skillet and cook until it is browned and cooked through, about 5-6 minutes.

  4. Once the chicken is cooked, add the sliced onion and bell pepper to the skillet. Cook for another 2-3 minutes until the vegetables are slightly softened.

  5. Add the mixed vegetables to the skillet and cook for an additional 2-3 minutes, until they are tender-crisp.

  6. In a small bowl, mix together the fish sauce, soy sauce, oyster sauce, and sugar. Pour this sauce mixture over the chicken and vegetables in the skillet.

  7. Stir everything together until well combined and heated through. Taste and adjust seasoning with salt and pepper if needed.

  8. Once everything is cooked and seasoned to your liking, remove the skillet from the heat.

  9. Serve the Cambodian Stir Fry Kreoung with Chicken hot over cooked rice.

  10. Garnish with fresh herbs like cilantro or Thai basil before serving.
